2021 PIERRE-YVES COLIN-MOREY Bourgogne Aligoté

Pierre-Yves Colin-Morey (PYCM) is widely regarded as one of the most talented white wine makers in the world. While his Grand Crus are legendary, his treatment of the "lesser" Aligoté grape is equally masterful, proving that in the right hands, this variety can produce wines of immense tension and character. 
The 2021 vintage was a classic, cooler year in Burgundy, which perfectly suited the high-acid profile of Aligoté. Sourced from very old vines (some over 50 years old), the fruit is handled with the same obsessive precision as his Meursaults: whole-cluster pressing, fermentation with indigenous yeasts, and aging in larger 350L barrels to minimize wood impact. Pierre-Yves seals his bottles with wax and uses untreated corks to prevent premature oxidation, ensuring that the 2021 Aligoté is a vibrating, crystalline expression of pure limestone energy.
