While Saint-Aubin is their stronghold, Olivier applies the same high-density planting and meticulous canopy management to his "Les Chataigners" parcel. This vineyard, located at a high elevation above Saint-Aubin, features poor, stony soils that naturally limit yields and enhance mineral concentration. The 2022 vintage provided a perfect balance of solar ripeness and the chiseled precision for which Lamy is famous. In the cellar, Olivier avoids the use of new oak, preferring large demi-muids to allow the high-altitude terroir to speak clearly.
